Pascal et Nicolas Reverdy, Cuvee les Coutes, Sancerre 2020

About the Wine:

This wine has a gorgeous aromatic essence of minerals, fresh citrus, and white flowers. On the palate it bursts with lime juice, grapefruit, and more minerals. Look to pair it with a goat cheese salad or some raw oysters and lemon juice!

About the Producer:

Pascal Reverdy takes special care to ensure that he grows the purest fruit that he can on his 14 hectares of vineyards. His vines are planted on Kimmeridgean soil, much like that of Chablis. The soil composition and 50-year-old vines, paired with the incredibly steep slopes, make for naturally low yields, therefore concentrated grapes with optimal ripeness that encapsulates the exceptional Sancerre minerality. He uses stainless steel, controlled temperature fermentation, and neutral oak and acacia barrels for ageing. His wines have put his small village of Maimbray on the map in Loire.

Hailing from a single hillside plot of 55-year-old vines on chalky Kimmeridgian Marne (aka Terre Blanche), hand-harvested at 45 hl/ha. Fermented and aged in stainless steel tanks.
