Raul Perez ‘Ultreia Saint Jacques,’ Mencia, Bierzo

About the Wine:
On the nose there are notes of violet, minerals, and hints of cappuccino. On the palate there is a calcareous characteristic with well-integrated acidity. It is round, bold, and appetizing. With the tannin of this wine, think of pairing it with fatty or cured meats!
About the Producer:
Raul Perez is a well-known name in the world of wine. You may know him from aging his wines underwater. His top priority is to exert minimum influence on the grape, letting the wine express itself without touching it. He works closely with nature and even says that he always watches the birds because they know which grapes are tastier. He grew up in the Bierzo region of Leon, Spain on a family winery, Castro Ventosa.
